VSG: Body (Weight Loss)

Spicy White Bean Chili

 

SERVES: 4 PREP TIME: 55 MIN Gluten Free | Soy Free

Ingredients:

• 1 tablespoon coconut oil
• ½ tablespoon garlic, minced
• 1 cup onion, finely chopped
• 3/4 cup bell pepper, chopped
• ¼ cup celery, chopped
• 1 cup carrots, chopped
• 1 cup mushrooms, sliced
• ½ tablespoon cumin
• ½ tablespoon chili powder
• ½ teaspoon black pepper
• ½ teaspoon dried oregano
• ½ teaspoon dried basil
• 1 ½ cups diced tomatoes with juice (from jar)
• 1 cup white kidney beans, boiled
• ¼ cup bean water
• 1 cup vegetable broth
• 3 tablespoons tomato paste
• 1/8 cup red wine
• ½ teaspoon hot sauce or tabasco
• 1 ½ teaspoons cocoa powder
• 1 1/8 teaspoons salt or to taste

Directions:

1. Using a large pot, bring oil to medium heat.
Add garlic, onions, bell pepper, celery, carrots, mushrooms, cumin, chili powder, black pepper, oregano, basil, and sauté for 3-5 minutes.

2. Add in diced tomatoes, white beans, bean water, vegetable broth, tomato paste, red wine, hot sauce, cacao powder, and salt to taste.

3. Mix thoroughly, bring to a boil, reduce heat to low heat, cover and let simmer for 20-25 minutes.

4. Serve with rice, pasta or your favorite grain for a delicious and hearty meal.
