Chickpea Pumpkin Seed
Stir-Fry
SERVES: 4 PREP TIME:

Free
Ingredients:
• 1 tablespoon coconut oil
• 2 garlic cloves,
minced
• 1 cup onions, chopped
• 3 cups plum tomatoes, chopped
• 2 cups garbanzo beans,
cooked, drained
• 2 cups baby spinach
• ½ cup vegetable broth
• ¼ cup raw pumpkin seeds,
crushed
• Salt and pepper to
taste
Directions:
1. In a large pan, bring
coconut oil to medium-high heat.
2. Add minced garlic, onions,
and fry for 2-3 min until fragrant.
3. Add chopped tomatoes,
garbanzo beans and continue cooking for another
5 minutes. Add salt to taste and ¼
cup of vegetable broth if too dry.
4. Then add spinach, ¼
cup vegetable broth, and cook for 1-2 minutes.
5. Remove from heat, sprinkle
with crushed pumpkin seeds, salt and pepper
to taste, and mix thoroughly.
6. Serve over a bed of rice,
quinoa, or your favorite grain.
