Summer Squash: Rich in B6

Summer Squash: Rich in B6

Vegan Survival: Brain
Food: Summer Squash
Nutrient: Rich in vitamin B6 (pyridoxine)

Benefit: B6 is needed for your brain to produce serotonin. This brain chemical keeps you calm, happy, and lets you sleep well at night.

Cooking tips

If you want maximum nutrition, try adding some raw squash to your salad. Would you rather cook your summer squash instead? Don't worry. Vitamin B6 in vegetables is relatively stable during cooking. About 85%-90% of the B6 remains, depending on
the style of cooking.

Try some in your favorite soup, stir-fry or baked dish.

So next time you go to the market, add summer squash to your shopping list, and keep your brain happy and healthy!
