Spring
Pesto with Wild Garlic
Ingredients
for 2-3 servings:
- 1
large handful of freshly harvested
wild garlic leaves
- 150
ml omega-3 oil of
your choice
- 3
tablespoons pine nuts
- 1
tablespoon lemon juice
- 1
clove of garlic
- Coarse
salt
- Freshly
ground pepper
Preparation:
Wash the wild garlic, shake dry and
spread on a paper towel to dry. Meanwhile,
fry dry the pine nuts in a pan. Mince
now wild garlic leaves coarsely and
place them in a large vessel.
Combine
all other ingredients with wild garlic
and purée with a hand blender
until desired consistency. If necessary
pour a little omega-3 oil. Season
with coarse salt and pepper. Delicious
with fresh pasta or roasted vegetables.
