Colorful
Egg Salad
Ingredients
for 2 servings:
- 3
hard boiled eggs
- 1
small yellow pepper
- ½
bunch of radishes
- ½
bunch of chives
- 80
g fat quark
- 5
tablespoons of omega-3 oil
of your choice
- 6
tablespoons milk
- 2
tsp Dijon mustard
- 1
tablespoon tamari
or other mild soy sauce
- 1
tablespoon lemon juice
- ½
tsp acacia honey
- freshly
ground pepper
- some
seasoned salt
Preparation:
Grab the eggs from the pan and coarsely
chop them. Peel, wash and dice the
pepper. Wash the radishes and cut
into slices. Wash the chives, cut
into small rings and mix everything
in a bowl together.
Make
a salad dressing from the fat quark,
milk, omega-3 linseed oil, mustard,
lemon juice, Tamari sauce and honey.
Quickly whisk all ingredients together
until no more oil is visible for a
smooth consistency.
Now
add the salad dressing to the eggs
and vegetable mixture and stir gently.
Season with a little salt and possibly
pepper to taste and serve.
Tips:
Add something mild like curry powder
and chopped coriander to the salad
dressing for a fine, exotic touch.
